Seriously. I don't know how these turned out so well. I am THRILLED.
I was inspired by the good people at Awesome Foods, who provided me with some excellent nourishment during tech week of the shows I was working the last few weeks. No longer regularly in the neighbourhood with the great health food store that sells these beauties, I decided to take it upon myself to subject a regular ole' zucchini to the dehydrator to see what would happen.
And here it is!
An easy, delicious way to incorporate a crunchy snack + green vegetables + vitamin B12 + healthy fats into your day. NO guilt. ALL good. Husband-approved.
1 medium zucchini, sliced into 1/3" rounds
1/4 cup cashews, soaked overnight and drained
2 tbsp nutritional yeast
2 tsp Himalayan sea salt
2 tsp black pepper
1. Blend cashews, nutritional yeast, salt, and pepper in food processor until smooth.
2. Coat zucchini slices in mixture evenly on both sides.
3. Lay flat in dehydrator* and dehydrate for 12 hours at 110F.
You can also swap out the zucchini for other hearty veggies, like parsnips, carrots, or onion.
*if not using a dehydrator, spread the zucchini on a baking sheet and bake at 150F for 2 hours, or until mixture is dry and zucchini is crunchy and shriveled.
