This Pineapple Kale Smoothie Bowl with Chia Seeds has a little more sugar than I usually include in my posts here, but it's a great intro green smoothie if you're not in a place where romaine, celery and kale (alone) are your thing. Feel free to adjust the sweetness to your liking. If you skip the banana, use extra-ripe plantain or up the coconut milk and add a little almond milk to keep it nice and creamy.

Pineapple Kale Smoothie Bowl with Chia Seeds
Serves 1
A creamy, sweet, spoonable green smoothie topped with crunchy chia and chewy coconut flakes.

Ingredients
  1. 1 cup loosely packed kale, roughly 2 leaves
  2. 1 medium banana
  3. ½ cup fresh pineapple chunks
  4. ¾ cup coconut water
  5. ½ lemon, squeezed
  6. 1.5 tbsp chia seeds
  7. 1 tbsp coconut flakes or shredded coconut
Instructions
  1. Remove large ribs from kale and tear into 3” pieces.
  2. Combine kale, banana, pineapple, lemon and coconut water in a blender and blend until smooth. Add water if needed to reach desired consistency.
  3. Pour into bowl and sprinkle with chia and coconut.
