Best-ever Homemade Veggie Burgers
1/2 head of garlic, roasted and pureed
2 tbsp extra virgin olive oil
1 can chickpeas, drained
1/4 cup chopped marinated artichokes
1/2 cup chopped almonds
2 tbsp chopped Kalamata olives
2 tbsp chopped green onions
2 tbsp unsweetened vegan yogurt
1/2 lemon, squeezed
1 tsp each basil, mint, parsley
2 1/4 cups cooked white quinoa
salt and pepper
